Can you believe Summer is here? I am super excited about it too. I recently shared some of my favorite summer meals on the blog and it was a winner, so now I am sharing a crockpot version. You need these summer dinner crockpot recipes. Believe me! It’s way too hot in Texas during the summer, so a crockpot recipe is a great way to get a home-cooked meal. I have been working on trying out these summer dinner crockpot recipes, and here is a round-up of the winners!
Down Home Cooking
This red beans and rice was the WINNER out of all the crockpot recipes! What makes it even more impressive is that it’s even better on the second day! If you want a meal that feels like you did a lot, but really you just threw it in the crockpot, then this one is it. I would recommend adding chopped celery, and one chopped green bell pepper. The flavor was amazing and it wasn’t too much.
Pasta
I love a good pasta recipe! Well, really, any Italian food! These recipes are some of my favorite crockpot pasta dinner recipes. First up is the crockpot pizza casserole. In our home, we have pizza every Friday, and this was a cheaper and healthier way to get that pizza Friday done. It’s a super simple recipe and takes less than 30 minutes of prep time. Next is the crockpot Chicken Alfredo. I mean, who doesn’t love Alfredo? Pair this with a side salad and some garlic bread, and you have the perfect weeknight winner.
Did someone say tacos?
Last but certainly NOT least, my boys get pretty serious about Taco Tuesday around here. Every Tuesday, we eat some rendition of Tacos. My boys still prefer the traditional tacos over anything else, but there are NEVER leftovers when I make this Slow Cooker Taco Pasta! I always judge winning recipes by leftovers; if there are none, then there you have it. LOL!
