Each morning after breakfast, I get the dreaded question that the kids ask every night, “What’s for dinner, Mom?” If you are anything like me, then you had a fancy dinner menu planned, but then the day got the best of you, so you decide that you need something to cook and fast! An easy weeknight taco recipe comes to the rescue.
I got your back. I want to share my amazing easy weeknight taco recipe with you. My boys devour these tacos EVERY single Tuesday. Sometimes it’s hard to come up with a dinner recipe to feed a small army that will take less than 30 minutes, but I think I actually have this one down to a science. LOL! This is one recipe that you will need to print and save because it will come in handy when your family wants a yummy meal, but you don’t have much time.
I know what you are actually thinking, why do I even need a taco recipe? They are so easy to make! You are right, tacos are easy to make, but this one special step that I add to my taco recipe will make a HUGE difference in the way you eat tacos. I am sure once you do this, you will never eat tacos the same way again.
Easy Weeknight Taco Recipe
Ingredients
- 1 box Old El Paso stand n' stuff taco shells
- 1 pound 93/7 Ground Beef
- 1/2 cup Shredded sharp cheddar cheese
- 1 package H-E-B Low Sodium Taco Seasoning This one is my favorite
- 1 Tomato
- 1/2 cup Salsa
- 2 cups Shredded lettuce
Instructions
- Preheat the oven to 350 degrees
- Spray a 9×13 metal baking dish with olive oil cooking spray
- Place taco in metal baking dish and put about 2 tablespoons of shredded cheese in each shell
- Put taco shells with cheese in oven to cook for about 5-8 minutes
- Cook ground beef for about 10 minutes until brown and well done
- Add taco seasoning and water according to taco package instructions
- Allow taco meat to simmer about 5 minutes
- Spoon about 1/4 cup taco meat into each taco shell
- Top each taco with 3 tablespoons of cheese
- Place in the oven and cook for about 10 minutes
- Remove tacos from the oven and allow to rest for 5 minutes
