Nothing says “I LOVE YOU!” to a friend or a loved one, like bringing over a few Summer recipes during their time of need. Hospitality is my love language, and I love sending friends and family a warm meal. My mom randomly made our family spaghetti last week, and my little heart exploded. The thought of her thinking about us, and she didn’t even know my back was hurting me that day, and I needed rest. See that is the beauty of kindness; you never know who needs it. Anyhoo, here are a few of my favorite Summer recipes you should try out or make for a special friend or loved one this season.
Something Quick
What I love about these meals is that they are quick. I mean, throw it in the pan and be done in less than 30 minutes. Those types of meals are my favorite because usually, when the boys get home from school, it gets a little chaotic around here, and time is valuable. First up, are these Burger Bowls from All the Healthy Things. We literally make these once per week. You can choose to use your own premade dressing, but it’s divine if you make the homemade one! You won’t want it any other way (unless you are running short on time, of course. Then do what you gotta do, Sis.) Another one of my quick favorites is this 20-minute Skillet Sausage & Zucchini. I love using apple sausage for this recipe, and my kids devour it. I usually end up doubling the recipe so I can have leftovers for lunch the next day, and I add rice on the side.
This Recipe Screams Spring
Next up are these Hawaiian Chicken bowls with Coconut Rice. We made this last week, and the boys asked for seconds and thirds. Too bad I didn’t make enough because we ran out before I could be done. The key to cooking this dish is to let the chicken marinate for at least 24 hours before cooking it. That allows it to be more flavorful. While discussing bowls, you can make enough rice to last for two days and make these Ground Turkey and Teriyaki Rice Bowls the next day. You might as well make good use of your time. These are perfect for a healthy mid-week recipe. When I think about Summer, I think about LEMONS! With that being said, this Lemon Basil Orzo with Chicken is a recipe you must try. It’s refreshing.
